While beginning to create this month’s cocktail I was staring at a bottle of The Scarlet Ibis Rum from Trinidad that was sitting at my desk. Typically, rum isn’t the first spirit I gravitate toward but when this fantastic complex yet delicate rum crosses my path I had all the reason to imbibe. Thus the name for this month’s cocktail of choice is called Reason for Rum.
When crafting this drink I wanted to showcase the rums complex yet soft characteristics. Falernum works as the perfect sugar component bringing out the vanilla and clove notes of the rum. Similarly, the raspberry syrup complements the light tropical fruit notes on the nose. Finally, lime is the citrus of choice to counter the sweet. Altogether, this cocktail is perfect to enjoy with or without food, day or night and anytime of the year. Cheers!
1 ½ oz The Scarlet Ibis Rum
½ oz Velvet Falernum
¾ oz Raspberry Syrup
¾ oz Lime Juice
Pour all ingredients into a shaker, fill with ice and shake vigorously. Double strain the liquid into a chilled cocktail glass and garnish with both a lime peel and a fresh raspberry.
